    Prepare the Marinade

    In a mixing bowl, combine lime juice, chopped cilantro, minced garlic, olive oil, salt, and black pepper. Mix well.

    Marinate the Fish

    Add the Mahi-Mahi fillets to the marinade. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes.

Slaw

    Make the Slaw

    In a separate bowl, mix julienned cucumber and shredded yucca root. Drizzle with lime juice, and season with salt and black pepper. Toss to combine and set aside.

Cooking and Assembly

    Cook the Fish

    Heat a grill or skillet over medium-high heat. Remove the Mahi-Mahi from the marinade and grill for about 4-5 minutes on each side or until cooked through and flaky.

    Warm the Tortillas

    In another skillet, warm the corn tortillas for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    Place cooked Mahi-Mahi on each tortilla. Top with cucumber-yucca slaw and drizzle with chipotle aioli. Garnish with fresh cilantro and serve with lime wedges.
