    Prepare the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until well mixed.

    Mix Wet Ingredients

    In another bowl, beat the eggs and then add the vegetable oil and vanilla extract. Whisk until fully combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

    Add Carrots, Walnuts, and Raisins

    Fold in the shredded carrots, chopped walnuts, and raisins until evenly distributed in the batter.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
