Cook the Penne Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Prepare the Bolognese Sauce (if chosen)
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent, about 3-4 minutes. Add the ground beef or turkey and cook until browned, breaking it up with a spoon. Stir in the canned crushed tomatoes and dried oregano. Simmer for 15-20 minutes, seasoning with salt and black pepper to taste.

Prepare the Pomodoro Sauce (if chosen)
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft, about 3-4 minutes. Stir in the canned crushed tomatoes and season with salt, black pepper, and dried oregano. Let simmer for 10-15 minutes.

Prepare the Primavera Sauce (if chosen)
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until fragrant, about 3 minutes. Add fresh vegetables and sauté until tender, about 5-7 minutes. Season with salt and black pepper to taste.

Combine and Serve
Once the pasta is cooked and the sauce of your choice is ready, combine the pasta with the sauce in a large bowl. Toss to coat evenly. Serve immediately, topped with grated Parmesan cheese if desired.
