Prepare the Sausage Mixture
In a large mixing bowl, combine the ground turkey, fresh parsley, sage, thyme, minced garlic, onion powder, paprika, salt, and black pepper. Mix well using your hands or a spoon until all ingredients are evenly incorporated.

Stuff the Sausage (Optional)
If using pork casings, rinse them under cold water to remove excess salt. Use a sausage stuffer to fill the casings with the turkey mixture, twisting them into links of desired size. Tie the ends securely. If not using casings, simply form the mixture into patties or links.

Cook the Sausage
Heat olive oil in a large skillet over medium heat. Add the sausage links (or patties) to the skillet and cook for about 10-12 minutes, turning occasionally until they are browned and cooked through (internal temperature should reach 165°F or 74°C).

Remove the cooked sausages from the skillet and let them rest for a few minutes. Serve hot with your favorite sides or in a breakfast sandwich.
