Dough Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into it. Using a fork, whisk the eggs, gradually incorporating the flour until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare Meat Filling

    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. In a mixing bowl, combine the cooked beef, ricotta cheese, Parmesan cheese, minced garlic, salt, and black pepper. Mix well and set aside.

    Prepare Cheese Filling

    In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, cooked spinach, salt, and black pepper. Mix until well combined and set aside.

Signature Sauce Preparation

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Then add crushed tomatoes, salt, and black pepper. Simmer for 15 minutes. Stir in fresh basil before serving.

Assembling and Cooking Ravioli

    Roll and Cut Dough

    After the dough has rested, roll it out on a floured surface to about 1/16 inch thickness. Cut into squares (about 3 inches each).

    Fill Ravioli

    Place a teaspoon of the meat filling or cheese filling in the center of half of the squares. Moisten the edges with water and cover with the remaining squares, pressing to seal.

    Cook Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the cooked ravioli and drizzle with the prepared signature sauce. Garnish with additional basil or Parmesan, if desired.
