Gnocchi

Method

Gnocchi Preparation

  1. 1

    Cook the Potatoes

Boil the potatoes in a large pot of salted water for about 20 minutes or until they are fork-tender. Drain and let them cool slightly.

  2. 2

    Mash the Potatoes

Once cooled, peel the potatoes and mash them until smooth in a large bowl.

  3. 3

    Make the Dough

Add the flour, egg, and salt to the mashed potatoes. Mix until a dough forms. If the dough is sticky, add a little more flour until manageable.

  4. 4

    Shape the Gnocchi

Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

  5. 5

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

Creamy Herbed Tomato Sauce Preparation

  1. 6

    Sauté Onion and Garlic

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

  2. 7

    Add Tomatoes and Herbs

Pour in the crushed tomatoes along with the dried basil and oregano. Stir to combine and bring to a simmer.

  3. 8

    Incorporate Cream

Lower the heat and add the heavy cream. Stir until well mixed and let simmer for about 10 minutes. Season with salt and black pepper.

  4. 9

    Combine Gnocchi and Sauce

Add the cooked gnocchi to the sauce, tossing gently to coat. Cook for an additional 2-3 minutes until heated through.

  5. 10

    Serve

Serve hot, garnished with grated Parmesan cheese and fresh parsley.
