Mash the Potatoes
Once cooled, peel the potatoes and mash them until smooth in a large bowl.

Shape the Gnocchi
Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

Sauté Onion and Garlic
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Add Tomatoes and Herbs
Pour in the crushed tomatoes along with the dried basil and oregano. Stir to combine and bring to a simmer.

Incorporate Cream
Lower the heat and add the heavy cream. Stir until well mixed and let simmer for about 10 minutes. Season with salt and black pepper.

Combine Gnocchi and Sauce
Add the cooked gnocchi to the sauce, tossing gently to coat. Cook for an additional 2-3 minutes until heated through.

Serve hot, garnished with grated Parmesan cheese and fresh parsley.
