Scones

Method

Scones

  1. 1

    Preheat the oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the dry ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. 3

    Cut in the butter

Cut the cold butter into small pieces and add to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

  4. 4

    Combine wet ingredients

In a separate bowl, mix together the heavy cream, vanilla extract, and dried fruit.

  5. 5

    Combine wet and dry

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

  6. 6

    Shape the scones

Turn the dough out onto a floured surface and pat into a circle about 1 inch thick. Cut into wedges.

  7. 7

    Bake

Place the scones on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown. Cool slightly before serving.

Croissants

  1. 8

    Activate the yeast

In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 9

    Prepare the dough

In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture. Mix until a dough forms.

  3. 10

    Knead the dough

Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.

  4. 11

    Incorporate the butter

Roll the dough into a rectangle and place the cold butter in the center. Fold the dough over the butter and seal the edges.

  5. 12

    Roll and fold

Roll out the dough into a long rectangle, then fold it into thirds. Repeat this process 3 times for layers.

  6. 13

    Shape the croissants

Roll the dough into a large rectangle and cut into triangles. Roll each triangle from the wide end to the point to form a croissant.

  7. 14

    Proof and bake

Place the croissants on a baking sheet, cover, and let rise for another hour. Preheat the oven to 375°F (190°C), brush with egg wash, and bake for 15-20 minutes until golden brown.
