    Prepare the Oven

    Preheat your oven to 175°C (350°F) and grease an 8-inch round cake pan.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth.

    Mix Ingredients

    In a separate bowl, whisk together sugar, eggs, vanilla extract, and a pinch of salt until well combined. Gradually fold in the melted chocolate mixture until smooth.

    Bake the Cake

    Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.

    Cool the Cake

    Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Raspberry Ganache

    Prepare the Raspberries

    In a saucepan, heat the fresh raspberries over medium heat until they break down, about 5-7 minutes. Strain the mixture to remove seeds and set aside.

    Make the Ganache

    In another saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the dark chocolate, stirring until melted and smooth. Add the raspberry puree and mix well.

    Cool the Ganache

    Allow the ganache to cool slightly before pouring it over the cooled chocolate cake.

Chocolate Rum Truffle

    Prepare the Truffle Mixture

    In a saucepan, heat the heavy cream until it simmers. Remove from heat and add the dark chocolate, stirring until smooth. Stir in the rum and mix well.

    Chill the Mixture

    Refrigerate the truffle mixture for about 2 hours or until firm enough to scoop.

    Form the Truffles

    Using a melon baller or spoon, scoop out small amounts of the mixture and roll them into balls. Roll the truffles in cocoa powder to coat.

Whipped Crème

    Whip the Cream

    In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

    Serve

    Serve the whipped crème alongside the flourless chocolate cake, raspberry ganache, and chocolate rum truffles.
