Collect all ingredients listed above. Wash and chop the bell peppers, onions, and tomatoes into small, uniform pieces. Set aside.

In a medium bowl, crack the cage-free eggs and add salt and black pepper. Whisk together until the yolks and whites are fully combined.

In a non-stick skillet, heat the olive oil or butter over medium heat until shimmering or melted.

Sprinkle the chopped bell peppers, onions, tomatoes, and shredded cheese evenly over one half of the omelet. Cook for an additional 1-2 minutes until the cheese begins to melt and the eggs are fully set.

Using a spatula, gently fold the omelet in half over the garnishes. Slide the omelet onto a plate and garnish with fresh herbs. Serve immediately.
