    Prepare the Calamari

    Begin by rinsing the cleaned calamari under cold water. Pat them dry with paper towels to remove excess moisture.

    Mix the Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until the dry ingredients are fully blended.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into it; if it bubbles and sizzles, the oil is ready.

    Coat the Calamari

    Take a handful of the calamari rings and dredge them in the flour mixture, ensuring they are well coated. Shake off any excess flour.

    Fry the Calamari

    Carefully drop the coated calamari rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the fried calamari from the oil and transfer them to a plate lined with paper towels to drain excess oil. Repeat the frying process with the remaining calamari.

    Serve the calamari fritti hot, garnished with lemon wedges on the side. Enjoy with your choice of Ammoglio sauce and lemon aioli.
