Prepare the sausage mixture
In a large mixing bowl, combine ground pork, chopped fresh sage, garlic powder, onion powder, black pepper, salt, red pepper flakes, and maple syrup. Mix until all ingredients are well incorporated.

Form sausage links
Using your hands, take small portions of the sausage mixture and shape them into small links, about 2-3 inches long. Place them on a plate or a baking sheet lined with parchment paper.

Preheat the griddle
Heat a griddle or large skillet over medium heat. Add olive oil and allow it to heat for a minute.

Cook the sausage links
Carefully place the sausage links on the griddle, ensuring they are not touching. Cook for about 5-6 minutes on each side, or until they are golden brown and fully cooked through (internal temperature should reach 160°F or 70°C).

Serve
Once cooked, remove the sausage links from the griddle and let them rest for a couple of minutes. Serve hot with your favorite breakfast sides.
