Directions
- 1
Prepare the Ribs
Preheat your oven to 300°F (150°C). Rinse the baby back pork ribs under cold water and pat them dry with paper towels.
- 2
Make the Spice Rub
In a medium bowl, combine the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well until fully combined.
- 3
Apply the Spice Rub
Rub the spice mixture generously over both sides of the ribs. Place the ribs on a large baking sheet lined with aluminum foil.
- 4
Slow Roast the Ribs
Cover the ribs tightly with another piece of aluminum foil to retain moisture. Roast in the preheated oven for about 2.5 to 3 hours, or until the ribs are tender and the meat is pulling away from the bones.
- 5
Prepare the Barbecue Sauce
While the ribs are roasting, combine the mango juice, bourbon, ketchup, apple cider vinegar, Worcestershire sauce, and mustard in a saucepan over medium heat.
- 6
Simmer the Sauce
Bring the sauce to a simmer and cook for about 15-20 minutes, stirring occasionally until the sauce thickens slightly.
- 7
- 8
Final Bake
Increase the oven temperature to 400°F (200°C) and return the ribs to the oven. Bake uncovered for an additional 15-20 minutes, or until the sauce is caramelized and bubbly.
- 9
Serve
Remove the ribs from the oven and let them rest for a few minutes before slicing. Serve with additional barbecue sauce on the side.
