    Soak the Beans

    Rinse the dried pinto beans under cold water and place them in a large bowl. Cover with water and soak overnight, or for at least 6-8 hours. Drain and rinse again.

    Cook the Beans

    In a large pot, combine the soaked beans, 4 cups of fresh water, chopped onion, and garlic cloves. Bring to a boil over medium-high heat, then reduce to low and simmer, covered, for about 1.5 to 2 hours or until the beans are tender.

    Season the Beans

    Once the beans are tender, add cumin and salt to taste. For whole beans, stir gently and serve. For refried beans, proceed to the next step.

    Refry the Beans (Optional)

    In a skillet, heat the oil over medium heat. Add the cooked beans (drained of excess liquid if necessary) and mash with a fork or a potato masher to your desired consistency. Cook for about 5-10 minutes, stirring frequently, until heated through and slightly crispy.

    Serve

    Serve the beans warm as a side dish or as a filling for burritos, tacos, or other dishes.
