Frijoles Charros

Preparation

    Prepare Frijoles Charros

    Rinse the pinto beans and soak them overnight in water. Drain and transfer to a pot with 4 cups of fresh water. Bring to a boil, then reduce heat and simmer for 1 hour.

    Cook Bacon and Chorizo

    In a skillet, cook bacon until crispy. Add chorizo and cook until browned. Remove from heat and set aside.

    Add Vegetables

    In the same skillet, sauté diced onion, minced garlic, and chopped tomatoes until soft. Stir into the beans along with cooked bacon and chorizo. Season with cilantro, salt, and pepper.

    Prepare Red Chile Sauce

    Toast red chile peppers in a dry skillet until fragrant. Soak in hot water for 15 minutes, then blend with a cup of the soaking water until smooth.

    Cook Pork and Potatoes

    In a pot, add the pork shoulder, diced potatoes, onion, minced garlic, cumin, salt, and pepper. Pour the blended red chile sauce over the top and simmer for 2 hours until the pork is tender.

    Serve

    In a bowl, serve a hearty portion of frijoles charros topped with the red chile pork and potatoes. Offer corn or flour tortillas or bread on the side.
