    Sear the Pork

    In a large pot, heat a tablespoon of oil over medium-high heat. Add the diced pork shoulder and sear until browned on all sides. Remove the pork and set aside.

    Cook the Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

    Add Spices and Broth

    Stir in the red chile powder, cumin, salt, and black pepper. Cook for 1 minute until fragrant, then add the chicken broth and bring to a boil.

    Simmer the Stew

    Return the seared pork to the pot. Reduce heat to low and simmer for 1.5 hours, or until the pork is tender.

    Add Hominy

    Stir in the hominy and cook for an additional 30 minutes until heated through.

    Serve

    Ladle the posole into bowls and garnish with lime wedges, chopped onion, and cilantro. Serve with tortillas or bread of your choice.
