Prepare the Enchilada
Take a corn tortilla, fill it with your choice of beef or chicken, roll it tightly, and place it in a baking dish. Pour either red or green enchilada sauce over the top and sprinkle with cheese. Bake at 350°F for 15-20 minutes until heated through.

Prepare the Flautas
Take another corn tortilla, fill it with cooked beef or chicken, and roll it tightly. Heat vegetable oil in a skillet over medium heat and fry the flautas until golden brown and crispy. Drain on paper towels.

Make the Chile con Carne
In a saucepan, combine chiles with salt, pepper, and a little water. Simmer until thickened and flavors meld together.

Prepare the Tamale or Relleno
If using tamales, steam according to package instructions. If using rellenos, prepare by stuffing roasted peppers with cheese or desired filling and frying until golden.

Serve the Dish
On a plate, serve the rolled enchilada, flauta, and your choice of tamale or relleno. Add a side of refried beans and cooked rice. Top everything with additional cheese if desired.
