    Prepare the Tamale

    Steam the tamale according to package instructions until heated through.

    Make the Red Chile Sauce

    In a saucepan, heat the red chile sauce over medium heat. Add diced potatoes and simmer until potatoes are tender, about 15 minutes.

    Prepare the Flauta

    In a skillet, heat vegetable oil over medium-high heat. Roll shredded chicken in a corn tortilla and fry until crispy, about 3-4 minutes on each side. Drain on paper towels.

    Assemble the Enchilada

    Soften corn tortillas in the microwave or on a skillet. Fill with shredded pork, roll them up, and place seam-side down in a baking dish. Pour red chile sauce over the top and sprinkle with cheddar cheese.

    Bake

    Preheat the oven to 375°F (190°C) and bake the enchiladas for 20-25 minutes until heated through and the cheese is melted.

    On a plate, serve one rolled enchilada, one pork tamale, and one chicken flauta. Accompany with red chile con carne (potatoes included), refried beans, and cooked rice. Garnish with chopped cilantro and serve with sour cream on the side.
