    Make the Dough

    In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

    Add Egg and Water

    Beat the egg and add it to the flour mixture. Stir in cold water, one tablespoon at a time, until the dough comes together.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Preheat Oven

    Preheat the oven to 375°F (190°C).

    Roll Out Dough

    On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles using a biscuit cutter.

    Fill Empanadas

    Place a tablespoon of one of the fruit fillings in the center of each circle. Fold the dough over and crimp the edges to seal.

    Bake

    Place the empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.

    Cool and Serve

    Allow to cool slightly before serving. Enjoy your mixed fruit empanadas!
