Preparation and Cooking
- 1
Marinate the Beef
In a bowl, combine olive oil, soy sauce, garlic powder, black pepper, and salt. Cut the Angus beef tenderloin into 1-inch cubes and add to the marinade. Let it marinate for at least 1 hour in the refrigerator.
- 2
Prepare the Vegetables
While the beef is marinating, chop the red bell pepper, green bell pepper, and onion into 1-inch pieces.
- 3
Assemble the Skewers
Preheat the grill. Thread the marinated beef, bacon slices, and chopped vegetables onto skewers, alternating ingredients.
- 4
Grill the Skewers
Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the beef is cooked to your desired doneness.
- 5
Prepare the Rice
While the skewers are grilling, cook the rice according to package instructions.
- 6
Serve
Serve the skewers with rice, guacamole, lime wedges, cilantro, and either a flour tortilla or dinner roll alongside a side salad.
