Measure and chill

Place 2 cups plain whole-milk yogurt and 1 cup cold water in the refrigerator until very cold (about 15–30 minutes) if not already chilled. Chill 6 ice cubes as needed.

Dissolve sugar

In a small bowl, combine 2 tablespoons granulated sugar and a pinch of fine sea salt. Add 1 tablespoon of the cold water and stir until the sugar is mostly dissolved. This ensures even sweetness throughout the lassi.

Blend

In a blender, add the chilled yogurt, the remaining cold water, the dissolved sugar mixture, and 1 teaspoon ground cardamom if using. Add the ice cubes. Blend on high for 30–45 seconds until smooth and frothy. Taste and adjust sweetness: add up to 1 more tablespoon sugar if you prefer it sweeter, then blend 5–10 seconds more.

Serve

Pour the lassi into 4 tall glasses (about 1/2 to 3/4 cup per serving depending on glass size). If the lassi is very thick, divide into 3 servings; if frothy and aerated, you will get 4. Garnish each glass with a small sprig of fresh mint and a sprinkle of finely chopped pistachios if desired.

Storage

Serve immediately for best froth. Leftover lassi can be refrigerated in a sealed container for up to 24 hours; stir or re-blend briefly before serving as separation may occur.
