Combine ingredients

Place 2 cups of plain full-fat yogurt into a blender or a large mixing bowl if using an immersion blender. Add 1 cup of cold whole milk, 2 tablespoons granulated sugar, and a pinch of fine sea salt. The sugar and salt balance the tang of the yogurt and enhance creaminess.

Blend to smoothness

Blend on medium-high for 30–45 seconds until the mixture is completely smooth and slightly frothy. If using an immersion blender, blend in a tall container for 45–60 seconds, moving the wand to remove any lumps. Taste and adjust sweetness: add up to 1 additional tablespoon sugar if desired and briefly re-blend.

Add ice and chill

Add about 4–6 ice cubes (or 1 cup crushed ice) to the blender and pulse 2–3 times until the lassi is chilled and slightly frothy. If you prefer a thicker, unblended cold lassi, chill the blended base in the refrigerator for 30 minutes and serve over ice instead of blending the ice.

Finish and serve

Pour the lassi into two tall glasses (approximately 2 servings). If desired, garnish each glass with a light sprinkle (about 1/4 teaspoon total) of ground roasted cumin, a pinch of chopped fresh mint leaves, or a lightly crushed cardamom pod on top for aroma. Serve immediately while cold and frothy.
