Kulcha dough
Bloom the yeast: in a small bowl combine warm water (about 105–115°F / 40–46°C), sugar and active dry yeast. Stir gently and let stand 5–8 minutes until foamy.
Mix dry ingredients: in a large mixing bowl combine the flour and salt.
Combine wet and dry: make a well in the flour, add yogurt, oil and the foamed yeast mixture. Mix with a spoon or your hand until a shaggy dough forms.
Knead the dough: turn onto a lightly floured surface and knead 6–8 minutes until smooth and elastic. If dough is sticky, sprinkle up to 2 tbs more flour; if too stiff add a little water, 1 tbs at a time.
First rise: place dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap and let rise in a warm place until doubled, about 60–75 minutes.
Paneer-onion filling
Prepare paneer: crumble or grate the paneer so pieces are small and easy to fold into dough.
Combine spices and paneer: lower heat to medium-low. Add crumbled paneer, garam masala, ground cumin, red chili powder, amchur (or lemon juice), ¾ tsp salt and chopped cilantro. Stir and cook 2–3 minutes just to warm through and marry flavors. Remove from heat and let filling cool to room temperature.
Adjust texture: if the filling seems too wet, sprinkle 1–2 tbs of fine breadcrumbs or a pinch of gram flour (besan) to bind. The filling should be moist but not soggy.
Assembling and cooking kulcha
Divide dough: punch down the risen dough and transfer to a lightly floured surface. Divide into 8 equal portions (approximately 70–80 g each for 3 cups flour; adjust if needed). Roll each portion into a ball and cover with a damp towel to prevent drying.
Stuff each kulcha: take one dough ball and flatten into a 3–4 inch disc using your fingers. Place 2–3 tbs of the cooled paneer-onion filling in the center. Bring edges together to seal tightly, pinch off any excess dough, and gently roll seam-side down into a smooth ball. Repeat with remaining pieces.
Roll to finish: on a lightly floured surface, gently press and roll each stuffed ball into a 6–7 inch round about 1/4 inch thick. Be gentle to avoid tearing; if a seam appears press and pinch to reseal, then roll again briefly.
Cook on skillet: heat a cast-iron skillet or heavy nonstick pan over medium-high heat until very hot. Place a rolled kulcha on the dry pan and cook 1–2 minutes until bubbles form and underside has golden brown spots. Flip and cook the other side 1–2 minutes. For extra char and a tandoori effect, brush the cooked side with ghee/butter, then using tongs hold the kulcha directly over an open flame for 10–15 seconds to blister; alternatively, press a hot cast-iron lid onto the kulcha to create charred spots. Repeat with remaining kulchas.
For serving
Warm chana masala: reheat or prepare chana masala so it's hot and saucy. If using store-bought, simmer in a saucepan 5–8 minutes; adjust seasoning.
Serve immediately while kulchas are hot, allowing guests to tear and scoop paneer filling with chana masala and chutney.
