Method
Make Simple Syrup (if not using store-bought)
Combine sugar and water
In a small saucepan, combine 1/2 cup granulated sugar and 1/2 cup water. (If you prefer sweeter or less sweet soda, adjust sugar quantity.)
Heat until dissolved
Warm over medium heat, stirring occasionally, until the sugar fully dissolves and the liquid is clear, about 3–4 minutes. Do not boil vigorously.
Cool
Remove from heat and let the simple syrup cool to room temperature. You can refrigerate it to chill quickly. This yields 1/2 cup syrup.
Assemble Lemon Soda
Prepare lemon juice
Juice fresh lemons until you have 1 cup (about 4–6 medium lemons). Strain the juice through a fine-mesh sieve into a bowl or measuring cup to remove seeds and excess pulp.
Muddle mint
Place the fresh mint leaves in a large pitcher or mixing jug. Add 2 tablespoons of the simple syrup. Gently muddle the mint with a muddler or the back of a spoon 6–8 times—press enough to bruise the leaves and release aroma, but do not shred them.
Combine lemon and syrup
Pour the strained lemon juice into the pitcher with the muddled mint. Add the remaining simple syrup (about 6 tablespoons if using total 1/2 cup) or adjust to taste, and stir gently to combine.
Season
Add 1/4 teaspoon black salt (kala namak) or regular salt and a pinch of ground black pepper if using. Taste and adjust salt or syrup as desired; the black salt adds a subtle savory, sulfurous note traditional to Indian lemonade.
Add ice and carbonated water
Add the ice cubes to the pitcher, then slowly pour in 3 cups of cold sparkling water to retain fizz. Stir gently 2–3 times to combine without flattening the soda.
Garnish and serve
Pour the lemon soda into four chilled glasses filled with extra ice if desired. Divide remaining mint leaves and a lemon slice among the glasses as garnish. Serve immediately so the soda stays fizzy.
Variations & Notes
For a sugar-free version, substitute simple syrup with an equivalent sweetener syrup suitable for carbonation (check manufacturer guidance). For a slushier texture, blend lemon juice, syrup and mint with 1 cup crushed ice and fold into chilled sparkling water.
