Prepare the Vegetables

Wash and chop the eggplant, bell peppers, and fresh tomatoes into bite-sized pieces.

Prepare the Potatoes

Peel and cut the potatoes into cubes. Boil them in salted water for about 5 minutes until slightly tender, then drain.

Make the Sauce

In a pan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the chopped tomatoes, salt, and pepper, and cook for 10 minutes until the sauce thickens.

Roast the Vegetables

In a large mixing bowl, combine the eggplant, bell peppers, and boiled potatoes. Drizzle with the remaining olive oil, and season with salt, black pepper, and fresh basil. Mix well.

Combine and Roast

Spread the vegetable mixture in a single layer on a baking sheet. Pour the tomato sauce over the top. Roast in a preheated oven at 400°F (200°C) for about 30 minutes, or until the vegetables are tender and slightly caramelized.
