Method

Pork Loin Preparation

    Prepare the Filling

    In a bowl, mix the Italian sausage, chopped rosemary, salt, and black pepper until well combined.

    Stuff the Pork Loin

    Cut a pocket in the pork loin and fill it with the sausage mixture. Secure with kitchen twine.

    Wrap with Bacon

    Wrap the stuffed pork loin tightly with bacon strips and secure with additional twine if necessary.

    Roast the Pork Loin

    Preheat the oven to 375°F (190°C). Place the pork loin in a roasting pan and roast for about 1.5 hours, or until the internal temperature reaches 145°F (63°C).

Smashed Potatoes Preparation

    Cook the Potatoes

    Boil the russet potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.

    Mash the Potatoes

    In a large bowl, combine the potatoes, Asiago cheese, sliced leek, butter, milk, salt, and pepper. Mash until smooth.

Green Beans Preparation

    Sauté the Green Beans

    Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute. Add the green beans, season with salt and pepper, and cook for about 5-7 minutes until tender.

Brandy-Peppercorn Sauce Preparation

    Make the Sauce

    In a saucepan, combine the brandy and beef broth. Bring to a simmer and reduce by half. Stir in crushed peppercorns and heavy cream. Cook until thickened and season with salt to taste.
