Cheesecake Preparation

    Prepare the crust

    In a mixing bowl, combine gluten-free graham cracker crumbs and melted butter. Stir until well combined. Press the mixture into the bottom of a 9-inch springform pan to create an even crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes, then remove and let cool.

    Make the filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, mixing until fully incorporated. Add eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.

    Combine and bake

    Pour the cream cheese filling over the cooled crust in the springform pan. Bake at 350°F (175°C) for 45-50 minutes, or until the center is set and no longer jiggles. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.

    Chill

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to set completely.

    Add chocolate drizzle

    Melt chocolate in a microwave or double boiler. Once the cheesecake is fully chilled, drizzle the melted chocolate over the top before serving.
