    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Pat the filets dry with a paper towel. Rub them with olive oil and season generously with salt and black pepper on both sides.

    Heat a cast-iron skillet or heavy pan over medium-high heat until it's very hot.
