Prepare and preheat
Preheat oven to 425°F (220°C). Place a wire rack on a baking sheet and lightly oil or line with parchment.

Dry wings
Pat the wings dry with paper towels to remove excess moisture, which helps them crisp in the oven.

Make dry rub
In a large bowl, combine salt, black pepper, paprika, garlic powder, and baking powder. Toss to mix evenly.

Season wings
Add the wings to the bowl and toss until evenly coated with the dry rub.

Bake first pass
Spread the wings in a single layer on the prepared rack. Bake for 25–30 minutes, until the skin is dry and starting to brown.

Finish baking
Flip wings and bake for an additional 5–10 minutes, until crisp and fully cooked (internal temperature at least 165°F / 74°C).

Toss in sauce
Transfer the baked wings to a clean bowl and pour the buffalo sauce over them. Toss to coat evenly.

Return coated wings to the rack for 1–2 minutes to set the sauce. Serve with celery sticks and a side of ranch or blue cheese dressing.
