Line a large serving platter or rimmed baking sheet with parchment and set a cooling rack over it, ready for draining.

Pat wings dry with paper towels. In a large bowl, toss wings with kosher salt, ground black pepper, and baking powder until evenly coated and dry to the touch.

Fill a deep fryer or heavy pot with vegetable oil to a depth of 2–3 inches (about 5–7 cm) and heat to 350°F (175°C). Use a thermometer to monitor the temperature.

Working in batches, fry wings until crisp and golden brown, 8–10 minutes per batch. Remove with tongs and drain on the rack or paper towels.

Prepare buffalo sauce by melting butter in a small saucepan over low heat, then whisking in hot sauce until smooth. If desired, add a splash of vinegar for brightness.

Toss the hot, drained wings in the buffalo sauce until evenly coated. Return to the rack or transfer to a clean platter.

Serve immediately with celery sticks and blue cheese dressing on the side for dipping.
