Prepare wings and dry rub
Pat dry 15 whole chicken wings (drumettes and flats) with paper towels. Preheat oven to 425°F (220°C). In a small bowl, combine baking powder, salt, black pepper, paprika, garlic powder, and cayenne pepper.

Coat wings
Toss wings with neutral oil to lightly coat. Sprinkle with the baking powder spice mix and toss again until all wings are evenly coated. This helps crisp the skin.

Arrange and bake wings
Line a baking sheet with a rack. Arrange wings in a single layer on the rack. Bake for about 25 minutes, flip, then bake 20-25 minutes more until crisp and golden.

Prepare buffalo sauce
In a small saucepan or microwave, melt butter. Stir in hot sauce and white vinegar. Keep warm.

Toss wings in sauce
Once wings are cooked, transfer to a large bowl. Pour or brush with buffalo sauce and toss to coat. Return to the oven for 2-3 minutes to set the glaze.

Make blue cheese dip
In a bowl, combine mayonnaise, sour cream, blue cheese crumbles, lemon juice, garlic powder, salt, and pepper. Stir until well mixed but still slightly chunky. Chill for at least 10-20 minutes to let flavors meld.

Serve buffalo wings with celery sticks on the side and a dollop of blue cheese dip. Enjoy.
