1. Preheat and prep pan
Preheat the oven to 425°F (220°C). If you have a baking rack, line a baking sheet and place the rack on top to promote airflow for crisp wings.
2. Dry wings and prepare rub
Pat the wings dry with paper towels to remove excess moisture. In a large bowl, whisk together baking powder, salt - rub, black pepper, garlic powder - rub, paprika, and cayenne - optional.
3. Coat wings
Add the wings to the bowl and drizzle with neutral oil. Toss until every wing is evenly coated with the rub and oil.
4. Bake wings
Spread the coated wings on the rack in a single layer. Bake for 35–40 minutes, flipping halfway, until the skin is crisp and golden.
5. Make sauce
While wings bake, melt unsalted butter in a small saucepan over medium heat. Whisk in hot sauce, garlic powder - sauce, and salt - sauce. Simmer 1–2 minutes to blend flavors.
6. Toss with sauce
Remove wings from the oven and transfer to a large bowl. Pour the warm sauce over the wings and toss to coat evenly.
7. Serve
Serve the traditional wings immediately.
