Method

LANDING

  1. 1

    Prep and Preheat

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment; set aside.

  2. 2

Make strawberry puree from 1 cup fresh strawberries in a blender until smooth. Strain if you want an ultra-smooth puree; set aside.

  3. 3

    Whisk Dry Ingredients

In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, and salt until evenly distributed; set aside.

  4. 4

Cream butter and sugar: In a large mixing bowl, beat 0.5 cup unsalted butter with 1.5 cups granulated sugar on medium-high speed until light and fluffy, about 3–4 minutes.

  5. 5

Add eggs and vanilla: Beat in the 3 eggs one at a time, then add 1 tsp vanilla extract.

  6. 6

    Combine Wet and Dry

With mixer on low, add dry ingredients in 3 additions, alternating with the milk and strawberry puree. Start and end with dry ingredients; mix until just combined.

  7. 7

Fold in finely chopped strawberries: Gently fold in 0.5 cup chopped strawberries to the batter for extra color and texture.

  8. 8

Bake the cakes: Divide batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Rotate pans halfway for even browning.

  9. 9

    Cool Cakes

Allow the cakes to cool in the pans for 10 minutes, then remove and transfer to a wire rack to cool completely before frosting.

  10. 10

    Make Strawberry Buttercream

In a mixer, beat 1 cup butter until creamy. Gradually add 4 cups powdered sugar, then beat in 0.5 cup strawberry puree, 1 tsp vanilla, and 0.25 tsp salt. If needed, add 1–2 tablespoons milk to reach spreading consistency.

  11. 11

Assemble and frost: If the cakes are level, place the first cake layer on a serving board, spread frosting between the layers, then frost the top and sides. Garnish with extra strawberry slices if desired.

  12. 12

Chill and serve: Chill the assembled cake for about 15 minutes to set the frosting before slicing and serving.
