Pat dry six boneless chicken pieces with paper towels to remove excess moisture.

In a large bowl, whisk together buttermilk, hot sauce, and 0.5 tsp salt. This will be the marinade/drench for the chicken.

In a separate shallow bowl, mix the dry coating: flour, cornstarch, paprika, garlic powder, onion powder, cayenne, black pepper, baking powder, and 0.5 tsp salt.

Dip each chicken piece into the buttermilk mixture, allowing excess to drip back, then dredge in the flour mixture until evenly coated. Place coated pieces on a rack and let rest 10 minutes to set.

Heat oil in a heavy pot or deep fryer to 350°F (175°C). Ensure there is enough oil to reach about 2 inches depth.

Fry chicken pieces in batches 3–4 minutes per batch, or until golden brown and internal temperature reaches 165°F (74°C). Remove with tongs and drain on a wire rack or paper towels.

Prepare the buffalo sauce by melting butter in a small saucepan, then whisking in hot sauce until smooth. Adjust heat by adding more hot sauce if desired.

Toss the fried chicken pieces in the buffalo sauce until evenly coated. Serve immediately with celery sticks and a side of ranch or blue cheese dip if desired.
