ALPHA WINGS
Method
ALPHA WINGS
- 1
Pat the chicken pieces dry with paper towels to remove excess moisture; set aside on a rack or plate.
- 2
In a large shallow bowl or plate, whisk together flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the dredging mixture.
- 3
In a separate bowl, whisk the buttermilk with the egg until fully combined and smooth.
- 4
In a third shallow dish, combine breadcrumbs and cornstarch; lightly season with a pinch of salt.
- 5
Dredge each chicken piece in the flour mixture, ensuring an even coat; shake off excess.
- 6
Dip the coated piece into the buttermilk-egg wash, letting any excess drain off.
- 7
Roll the piece in the breadcrumb-cornstarch mixture until fully coated; place on a rack and repeat with remaining pieces.
- 8
Heat oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). Use a thermometer to maintain temperature between batches.
- 9
Fry chicken in batches for 3–4 minutes per batch, until golden brown and internal temperature reaches 165°F (74°C). Transfer fried wings to a rack or paper towels to drain excess oil.
- 10
In a small saucepan over low heat, melt butter and whisk in hot sauce until fully combined; adjust heat to taste. Keep warm.
- 11
Toss the hot fried wings in the buffalo sauce until evenly coated, or serve sauce on the side for dipping.
- 12
Serve immediately with celery sticks and ranch or blue cheese dressing if desired.
