Method
LANDING - CRUST

Prepare crust
Preheat the oven to 325°F (165°C). Lightly grease a 9-inch springform pan. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and salt. Stir in melted butter until the mixture resembles wet sand and holds together when pressed.

Press crust into pan
Pour crust mixture into the pan. Press firmly onto the bottom and slightly up the sides to form an even crust, using the bottom of a glass or measuring cup.

Bake crust
Bake the crust for 8-10 minutes until set and lightly golden. Remove from oven and cool on a rack while you prepare the filling.

Cream cheese filling
In a large mixer bowl, beat the cream cheese on medium speed until smooth and free of lumps, about 2-3 minutes. Scrape the sides as needed.

Add sugar and sour cream
Add granulated sugar and sour cream; beat on medium speed until combined and creamy, about 2 minutes. Scrape the bowl again.

Add vanilla and eggs
Beat in vanilla extract. Add eggs one at a time, beating on low speed after each addition just until blended. Do not overmix.

Pour into crust
Pour the filling over the cooled crust and smooth the top with a spatula.

Bake filling in water bath
Place the pan in a larger baking dish, add hot water halfway up the sides (water bath), and bake at 325°F (165°C) for 55-70 minutes, or until the center gently jiggles.

Cool and chill
Turn off the oven and crack the door. Let the cheesecake cool in the oven for 1 hour, then remove and chill overnight in the refrigerator (minimum 4 hours).

Top with blueberries
Just before serving, scatter fresh blueberries over the top. If desired, lightly dust with a bit of powdered sugar or serve with a lemon glaze.
