    Make the dough

    In a small bowl, combine 1 cup warm water with 1 teaspoon sugar and sprinkle 1 teaspoon active dry yeast. Let sit 5-10 minutes until foamy.

    Mix dry ingredients and combine with liquids

    In a large bowl, whisk 2.5 cups all-purpose flour with 1 teaspoon salt. Create a well and add the foamy yeast mixture and 1 tablespoon olive oil.

    Knead dough and let rise

    Knead until the dough is smooth and elastic, about 8-10 minutes. Place in a lightly oiled bowl, cover, and let rise 60-75 minutes until doubled.

    Make tomato sauce

    In a small bowl, mix 1 cup tomato sauce with 1 teaspoon Italian seasoning. Taste and adjust salt if needed.

    Preheat oven and shape crust

    Preheat oven to 475°F (245°C). Punch down the risen dough and roll or stretch into a 12-inch circle on a floured surface. Place on a pizza stone or lightly oiled pan.

    Assemble pizza

    Spread the sauce over the crust. Sprinkle 2 cups shredded mozzarella evenly. Dollop 0.5 cup ricotta in spoonfuls over the cheese. Sprinkle 0.25 cup grated parmesan on top.

    Bake and finish

    Bake 12-15 minutes until the crust is golden and the cheese is bubbling. Remove from oven, let rest 5 minutes, slice, and serve.
