Make the dough
In a large bowl, whisk warm water, sugar, and yeast. Let sit 5-10 minutes until foamy. Stir in flour and salt, then add olive oil to form a shaggy dough. Turn onto a lightly floured surface and knead 8-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise in a warm spot until doubled, about 60-90 minutes.

Prepare sauce and cheese
If using store-bought tomato sauce, keep it warm. Otherwise, warm the tomato sauce in a small saucepan. Tear mozzarella into even pieces for topping.

Preheat and shape
Preheat oven to 475-500°F (245-260°C). If using a pizza stone, place it in the oven to preheat. Punch down the risen dough and roll or stretch it into a 12-inch circle on a lightly floured surface.

Assemble the pizza
Spread the tomato sauce evenly over the dough, leaving a thin border for the crust. Scatter mozzarella cheese over the sauce.

Bake
Bake in the hot oven for 10-12 minutes, until crust is golden and cheese is bubbly and lightly browned.

Finish and serve
Remove from oven. Drizzle with a little olive oil if desired, scatter fresh basil leaves on top, slice, and serve hot.
