Bloom yeast and combine liquids
In a small bowl, warm water to about 110°F (43°C). Add sugar and sprinkle yeast over the surface. Let stand 5–10 minutes until foamy.

Mix, knead, and rise
In a large mixing bowl, whisk flour and salt. Create a well in the center and add olive oil and the foamy yeast mixture. Stir to form a shaggy dough, then knead on a lightly floured surface for 6–8 minutes until smooth and elastic. Place dough in a lightly oiled bowl, cover, and let rise for 60–90 minutes until doubled in size.
Assemble and Bake

Preheat oven
Preheat oven to 475°F (245°C). If using a pizza stone, place it on a rack to heat as the oven warms.

Shape dough
Punch down risen dough. On a lightly floured surface, roll or stretch into a 12-inch circle. Transfer to a parchment-lined baking sheet or a lightly floured pizza peel.

Add sauce and toppings
Spread tomato sauce evenly over the dough, leaving a small border. Sprinkle mozzarella cheese over the sauce, then distribute sliced black olives, mushrooms, and pepperoni slices.

Bake and rest
Bake for 12–15 minutes, or until the crust is golden and cheese is bubbly. Remove from oven, let rest 5 minutes, slice, and serve.
