Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a mixing bowl, combine shredded mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper. Drizzle in olive oil and mix until a cohesive cheesy herb filling forms.

Roll the pizza dough on a lightly floured surface into a rectangle about 10x6 inches (25x15 cm).

Spread the cheese mixture in a long central line down the dough, leaving a border on the sides.

Fold the dough over the filling to seal, then pinch the edges to secure. Slice the filled log into approximately 1-inch (2.5 cm) wide sticks.

Place the sticks seam-side down on the prepared baking sheet. Lightly brush the tops with more olive oil and, if desired, sprinkle with extra Parmesan.

Bake for 12–15 minutes, or until the dough is golden and the cheese is melted and bubbly.

Remove from oven and let glowsticks cool for about 5 minutes before serving. Serve with marinara or a preferred dipping sauce.
