Method

Dough

  1. 1

    Activate yeast

In a small bowl, combine warm water (about 110°F/43°C) with active dry yeast. Stir and let sit 5 minutes until foamy.

  2. 2

    Mix dry ingredients

In a large mixing bowl, whisk together flour and salt until evenly distributed.

  3. 3

    Combine and knead

Pour the foamy yeast mixture into the flour, mixing until a shaggy dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic.

  4. 4

    First rise

Lightly oil a clean bowl, place dough inside, cover, and let rise in a warm spot for 60 minutes, until doubled in size.

Sauce base

  1. 5

    Prepare garlic oil

Mince the garlic. In a small skillet, heat olive oil over medium heat and sauté garlic for about 1 minute until fragrant (do not brown). Remove from heat.

  2. 6

    Season oil

Stir Italian seasoning into the warm garlic oil.

  3. 7

    Cool and set

Let the garlic oil cool briefly before brushing onto the dough.

Toppings

  1. 8

    Prep dairy and sausage

Shred mozzarella cheese and grate parmesan. In a skillet, brown Italian sausage until cooked through, crumble, and drain excess fat.

  2. 9

    Roll and top

Punch down the risen dough, roll into a 12-inch circle on a floured surface, then transfer to a pizza pan or stone. Brush with the garlic oil from the sauce base.

  3. 10

    Add toppings

Sprinkle mozzarella over the crust, scatter sausage crumbles, then dust with grated parmesan and red pepper flakes.

  4. 11

    Bake and serve

Bake in a preheated oven at 475°F (245°C) for 12–15 minutes, until crust is golden and cheese is melted. Let rest 5 minutes before slicing.
