Prepare Romaine and Croutons
Rinse romaine leaves under cold water, dry thoroughly (spin or pat dry). Chop into bite-sized pieces and transfer to a large serving bowl. If making croutons from bread, cube bread, toss with olive oil and a pinch of salt, and toast in a skillet or oven until golden and crunchy.

Make Caesar Dressing
In a small bowl, whisk together minced garlic, anchovy paste (optional), egg yolk or mayonnaise, Dijon mustard, lemon juice, and Worcestershire sauce. Stir in grated Parmesan. Slowly drizzle in olive oil while whisking vigorously to form a smooth, emulsified dressing. Season with salt and pepper to taste.

Toss Salad with Dressing and Cheese
Pour dressing over the chopped romaine. Toss to coat evenly. Add croutons and shaved or grated Parmesan; toss lightly to combine without wilting the lettuce.

Serve
Transfer to individual plates or a large platter. Finish with a few extra grinds of black pepper or extra Parmesan shavings if desired. Serve immediately.
