    Prepare Chickpeas

    Soak the dry chickpeas in water overnight. Drain and rinse before using.

    Make the Falafel Mixture

    In a food processor, combine the soaked chickpeas, chopped onion, sumaq, garlic, parsley, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is coarse but holds together.

    Form the Falafels

    Add flour to the mixture to help bind it, and mix well. Form small balls or patties from the mixture, about 2 inches in diameter.

    Fry the Falafels

    Heat oil in a frying pan over medium heat. Fry the falafel balls in batches, turning until they are golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove the falafels from the oil and drain on paper towels. Serve hot with your choice of sauce or salad.
