Prepare the Nut Filling

In a bowl, mix the chopped walnuts, chopped pistachios, sugar, and ground cinnamon. Set aside.

Prepare the Filo Pastry

Preheat the oven to 350°F (175°C). Melt the butter in a saucepan. Unroll the filo pastry and cover it with a damp cloth to prevent drying out.

Assemble the Baklava

Brush a 9x13 inch baking dish with melted butter. Lay down one sheet of filo, brush with butter, and repeat for 8 sheets. Spread 1/3 of the nut mixture over the pastry. Repeat the layering with 4 more sheets of filo, another layer of nuts, and then 4 more sheets. Finish with 8 more sheets of filo, brushing each with butter.

Cut and Bake

Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for 40-45 minutes or until golden brown.

Prepare the Syrup

While the baklava is baking, combine water, honey, and sugar in a saucepan. Bring to a boil and let it simmer for about 10 minutes. Remove from heat and let cool.

Finish the Baklava

Once the baklava is done baking, pour the cooled syrup evenly over the hot baklava. Let it sit for at least 4 hours or overnight for the syrup to soak in.
