Directions
Roast the Eggplant
Preheat your oven to 400°F (200°C). Cut the eggplant in half lengthwise and place it on a baking sheet. Drizzle with olive oil and season with salt. Roast in the oven for about 30-40 minutes, or until the flesh is soft and slightly charred.
Prepare the Eggplant
Once roasted, remove the eggplant from the oven and let it cool slightly. Scoop the flesh out of the skin and place it in a food processor.
Blend Ingredients
Add tahini, garlic, lemon juice, olive oil, ground cumin, smoked paprika, and black pepper to the roasted eggplant in the food processor. Blend until smooth and creamy.
Adjust Flavor
Taste the baba ganoush and adjust seasoning if necessary. You may want to add more salt, lemon juice, or tahini based on your preference.
Garnish and Serve
Transfer the baba ganoush to a serving bowl, drizzle with olive oil, and garnish with fresh parsley. Serve with pita bread, crackers, or fresh vegetables.
