    Ferment the Potatoes

    Peel and chop the potatoes into small cubes. Place them in a jar with water and a pinch of salt, and let them ferment at room temperature for 2-3 days until they develop a tangy flavor.

    Prepare the Vegetables

    In a pot of boiling water, blanch the English peas and edamame for 2-3 minutes. Drain and immediately transfer to an ice bath to stop the cooking. Drain again and set aside.

    Roast the Halibut

    Preheat your oven to 400°F (200°C). Season the halibut fillets with olive oil, salt, and black pepper. Place them on a baking sheet and roast in the oven for 12-15 minutes or until the fish flakes easily with a fork.

    Char the Peas

    In a skillet, add a splash of olive oil and sauté the blanched English peas until slightly charred, about 5 minutes.

    Assembly

    On a plate, place a scoop of fermented potatoes, top with roasted halibut, charred peas, edamame, and a generous dollop of smoked trout roe. Drizzle royale sauce around the plate for presentation.
