    Prepare the summer squash

    Slice the summer squash into thin rounds. Heat 1 tablespoon of olive oil in a skillet over medium heat, add the squash, and sauté until tender, about 5-7 minutes. Season with salt and pepper.

    In a bowl, combine the remaining olive oil, lemon juice, minced garlic (or finely chopped), and season with salt and pepper. Mix well to create a dressing.

    In a small saucepan, melt the butter over low heat. Once melted, remove from heat and keep warm.
