Prepare Wheat Berries

    Cook the Wheat Berries

    In a medium saucepan, combine wheat berries, water, and salt. Bring to a boil, then reduce heat and simmer for 45 minutes or until tender. Drain and set aside.

Char Grilled Treviso

    Char the Treviso

    Preheat a grill or grill pan over medium-high heat. Cut the treviso in half lengthwise and brush with olive oil, salt, and pepper. Place on the grill cut-side down and char for about 3-4 minutes until grill marks appear. Flip and grill for another 2-3 minutes. Remove and set aside.

Grill Heritage Pork

    Season and Grill the Pork

    Rub the pork chops with olive oil, chopped rosemary, minced garlic, salt, and pepper. Preheat the grill to medium-high heat. Grill the pork chops for about 6-8 minutes per side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let rest.

Make Pork Cherry Jus

    Prepare the Jus

    In a saucepan, combine pork drippings, cherries, red wine, and chicken broth. Simmer over medium heat until reduced by half. Stir in butter, and season with salt and pepper to taste. Strain the jus if desired.

Assemble the Dish

    Serve

    On a plate, create a bed of wheat berries, top with grilled treviso, and place the grilled pork chop on top. Drizzle with pork cherry jus before serving.
