    Prepare the Pork

    In a bowl, mix the chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture onto the pork shoulder evenly. Let it marinate for at least 1 hour or overnight in the refrigerator for better flavor.

    Cook the Pork

    Preheat your smoker or oven to 225°F (107°C). Place the marinated pork shoulder in the smoker and cook for about 4-5 hours, or until the internal temperature reaches 195°F (90°C). If using an oven, wrap the pork in foil after 2 hours and cook until tender.

    Prepare the Fries

    Cut the potatoes into thin strips to make fries. Toss with olive oil, salt, and finely chopped rosemary. Bake in a preheated oven at 425°F (220°C) for about 30-35 minutes, or until golden and crispy.

    Assemble the Sandwich

    Shred the cooked pork shoulder and place it on the sandwich buns. Top with roasted red peppers, pickled onions, sliced Fresno peppers, and a drizzle of kosho aioli and house hot sauce. Serve with rosemary fries on the side.
