    Prepare the Almond Cake

    Bake the almond cake according to your favorite recipe or use a store-bought version. Allow it to cool completely.

    In a heatproof bowl, layer the prickly pear sorbet followed by the calamansi sorbet on top. Freeze until firm, about 2 hours.

    On the cooled almond cake, place the frozen sorbet layers. Create a dome shape with the sorbets on top of the almond cake.

    Sprinkle the black sesame feuilletine on top of the sorbet dome to add a crunchy texture.

    In a mixing bowl, prepare Swiss meringue by heating egg whites and sugar over a double boiler until sugar dissolves, then whip until stiff peaks form.

    Spread the Swiss meringue over the entire dome, ensuring it is well covered. Use a spatula to create peaks.

    Drizzle the rum over the meringue-covered dome for added flavor.

    Preheat the oven to 500°F (260°C). Place the assembled Baked Alaska in the oven for about 3-5 minutes, or until the meringue is lightly browned.
