    Prepare the Steak

    Season the tomahawk steak generously with salt and black pepper on both sides. Rub with olive oil.

    Cook the Steak

    Preheat a grill or a cast-iron skillet over high heat. Sear the tomahawk steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

    Prepare the Potatoes

    Meanwhile, boil the new potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

    Make the Bordelaise Sauce

    In a saucepan, sauté shallots in 2 tablespoons of butter until translucent. Add red wine and reduce by half. Add beef stock and simmer until thickened. Stir in remaining butter, thyme, salt, and pepper.

    Serve

    Slice the tomahawk steak and serve it with the new potatoes and drizzle the bordelaise sauce over the top.
